Hungarian potato soup “Paprikás Krumpli”
Ingredients
- Ingredients:
- 1.5 kg potatoes waxy
- 1 red and 1 yellow bell pepper
- 4 medium-sized onions
- 2 tbsp lard
- 2 tomatoes
- 5 cloves garlic
- 1 tbsp sweet paprika powder
- 1 tsp paprika powder hot or 1 pinch chili powder
- 1 tbsp tomato puree
- 1 tsp caraway seeds whole
- 1 tsp salt
- 1/2 tsp ground pepper
- 4 Smoked sausages
- 1-2 tbsp Vegeta
Instructions
- Preparation:
- Peel and roughly chop the potatoes and garlic, peel and roughly dice the onions. Wash and roughly chop the tomatoes and peppers.
- Put 2 tablespoons of lard in a large pan with a capacity of approx. 4.5 liters and let it melt. When the lard has melted, reduce the heat to medium and add the onions, sauté lightly and then add the diced peppers. Sauté both for approx. 3 minutes, then add the two paprika powders, stir and immediately deglaze with 200 ml water.
- Now add the tomatoes, garlic, cumin, salt and pepper. Leave to simmer for about 5 minutes and then add the potatoes. Next, fill the pot up to the 4 liter mark, if you are using a 3.5 liter pot, then up to the 3 liter mark and so on. Stir the whole thing again and bring to the boil. As soon as it bubbles, reduce the heat to medium and leave to boil for 20 minutes. Finally, add the smoked sausages, leave to reduce for 5 minutes, then season the potato soup with 1-2 tbsp Vegeta as required.

A little tip: You can find Vegeta spice in any Walmart or German online store supermarket.The soup tastes best when it has been infused for a day.
