Serbian bean soup Pasulj recipe

Ingredients
  

  • 1 can of large beans
  • 2 carrots
  • 2 medium potatoes
  • 1 packet of dried meat or pancetta
  • 1 medium onion
  • 4 tsp Vegeta
  • 2 tbsp flour
  • 1 tsp ground sweet paprika
  • 75 ml oil

Instructions
 

  • Preparation:
  • Peel the potatoes and cut into large pieces
  • Wash the carrots and cut into rings
  • Put the beans, carrots and potatoes in the pan, season with 4 tsp Vegeta, add soup vegetables or greens if required and cook until the beans, carrots and potatoes are cooked.
  • Roux:
  • Pour 75 ml into a pan and heat until hot. Then add the onions and sauté until they have a nice, intense aroma or are very lightly browned. Then add the 2 tablespoons of flour and 1 teaspoon of paprika, stir over a low heat until everything is smooth and then add the sweat to the pan. Stir well again in the pan, leave to cook for approx. 10 minutes and then serve.

Notes

Tip: The bean soup tastes great with bread and ajvar. Simply add a little ajvar to the soup and enjoy.
By the way: my version comes from the Serbian province of Vojvodina. But even there, the soup recipes vary greatly. You can buy the Vegeta spice and Ajvar at Walmart or in Croatian online shops
